Jaffa Popcorn

Serves – 4

60ml coconut oil

100g corn kernels

30g butter

2 Squeezed oranges

Zest of an orange

Sultana/Raisins optional

1. Heat the coconut oil in a large heavy based saucepan on a medium to high heat. Add the corn and put the lid on quickly.

2. Shake the pan to keep the corn moving in the oil and to prevent burning. The popping will become rapid and then slow to a pop every 3 seconds or so. Be ready to pour into a large heatproof container as the popping stops.

3. Melt the butter in a small pan and stir in the orange zest and orange juice. Using a spoon sprinkle onto the prepared popcorn stirring as you go. Add the raisins and sultanas if wanted.
