When Jaffa gives you lemons

… they will be seedless!

Ok, that isn’t the most common saying about lemons but it is one we are fully embracing since the launch of Jaffa Seedless Lemons which are available to buy in Tesco.

Coincidently, we launched our new favourite citrus fruit just as the weather turned and our summer began. That inspired us to do a little research and find some delicious BBQ recipes using Jaffa Seedless Lemons.

So pray for sun, find your Jaffa Seedless Lemons and fire up the barbecue!

Greek Lemon Chicken Kebabs with Yogurt Marinade

These Greek Lemon Chicken Kebabs are the best way to cook chicken on the barbecue, evenly sized pieces of meat cook through more easily than a whole chicken breast and are less likely to dry out on the outside before the middle is cooked.

Chicken is also a fabulous flavour carrier, so a traditional Greek marinade of yoghurt, Jaffa Seedless Lemon, garlic and oregano is an ideal start for the tastiest barbecue. It isn’t necessary to marinade chicken for too long either as you don’t want to underestimate the tenderising properties of this marinade.

  • Yoghurt is known for its tenderising properties and gives you a nice juicy bite to the meat. 
  • The acid from the juice of the Jaffa Seedless Lemons also helps break down the fibres of the chicken while adding a tangy pop of flavour to each bite. If you also add the zest of one lemon to the marinade, that amps the flavour up even further. 
  • Garlic, well just because garlic!
  • Olive oil will help create a barrier while the chicken is on the barbecue.
  • Dried oregano works best in this recipe to give your marinade all the flavour that it calls for.

So a couple of hours before is the best time to get started, mixing your marinade and cutting your chicken into evenly sized pieces.

You can add vegetables to the skewers too but try to stick to those that will hold their shape on the barbecue. Courgettes and onions work very well as do sweet peppers, but tomatoes will fall apart.

Cut your vegetables to the same size as the pieces of meat so that the flame reaches each part of the kebab at the same time and no sticky out bits are burnt.

Another great tip is to pack the ingredients of the kebabs nice and tightly together on the skewers because the pieces will shrink during cooking and you do not want to be trying to pick your kebabs out of the charcoal.

Hold back some of your marinade to brush your skewers with during cooking to make sure to maximise the zesty flavour and create a layer to protect the kebabs from charring. That said, a little bit of charring is perfect for a barbecued kebab, adds to the whole flavour experience!

Make sure the coals are really hot and flames have died down so you are just left with glowing charcoal. If flames are still lapping at your food, the flavour can be affected by the fuel you are using. 

Turn your kebabs regularly during the cooking, and occasionally basting with the marinade you reserved for a dash of extra lemony flavour.

Jaffa Homemade Lemonade

This isn’t strictly a lemonade as it also contains Jaffa orange juice but the tart edge from the lemons makes for a very refreshing long drink on a hot day.

With Jaffa Seedless Lemons the process of making this delicious lemonade could not be easier, after all, who has time to be fishing lemon pips out of their drink?

You will need to prepare this lemonade a little ahead of time by making the sugar syrup and squeezing the oranges and seedless lemons into a tall jug to refrigerate before serving over ice with a slice to garnish obviously!

LEMON GIN FIZZ

This is a revelation! Tastes like homemade lemonade but with a gin kick to remind you to sip slowly!

Just measure 1 part gin, 2 parts freshly squeezed Jaffa Seedless Lemon juice, add ice and top up with soda water to taste. Maybe garnish with a twist of lemon and a mint leaf if you are feeling frivolous!

There is no sugar syrup in this recipe so it is sharp but paired with a good quality gin, it’s refreshing nature means few turn back!
